{rosemary tomato pesto}

One of my all-time favorite dinners is pasta with pesto. It’s so quick and easy to make and soooo delicious!!
Well, to make things a little more challenging than just opening a jar of pesto, I decided to make my own.
My mom has two big bushes of rosemary in front of her house, which smell amazing when entering the door. So, one day we put one and one together and decided on a rosemary-tomato-pesto. Yum!
Unfortunately I can’t really give any exact measurements of ingredients, since we made it from scratch and just added everything until the pesto had a good consistency, but this is what we used (for three jars):
  • fresh rosemary (about 3 stalks)
  • sun-dried tomatoes (about 1 cup, marinated in oil)
  • parmesan (about 1 cup)
  • pine nuts (about 1 cup)
  • olive oil (until you get a smooth consistency)
  • garlic (about 3 cloves)
  • salt & pepper (to taste)

How to:
  1. Grind pine nuts and rosemary in a food processor.
  2. Add garlic, sun-dried tomatoes, parmesan and olive oil and blend until you get a smooth consistency.
  3. Season to taste with salt & pepper.
  4. Enjoy as a dip or on pasta! ;)

We are back from a wonderful 4-day trip to Holland!
Our destination was Soest, which is located about 45 minutes outside of Amsterdam. Our friends (who moved from Texas to Europe last year as well) invited us to spend a long weekend with them.
We arrived around 5pm on Friday afternoon and spent the evening in their cute little town.

On Saturday we took the train to Amsterdam, where we spent all day walking around, gazing at the beautiful buildings and canals. We bought lunch at a local store and had a picnic in Vondelpark. Before leaving this beautiful city we took a boat tour through the Grachten (canals). Very worth the 8€!

We spent Sunday morning in the dunes in Soest. I’ve never seen so much sand that’s not by the beach..

And went to Amersfoort after lunch to walk around town. Amersfoort is a really cute little town. Definitely worth a stop when you’re traveling by! ;)
