Ingredients
- 2 eggs
- 1 cup powdered sugar
- 1 2/3 cups whipping cream
- 1 cup whiskey
- 2 tsp. vanilla
- 2 tsp. unsweetened cocoa powder
- 2 tsp. instant coffee
Instructions
- Heat some of the whiskey and dissolve the cocoa powder and instant coffee.
- Beat the eggs until creamy and add the whiskey and powdered sugar to it.
- Whip the cream into semi-solid consistency and mix with the egg-sugar-cocoa-coffee-whiskey mixture.
- Fill in a bottle and keep cold until ready to serve.
Notes
- the Baileys keeps for about 2 weeks (kept cold).
- shake well before serving.
- boil out a glass bottle to sterilize and let cool before filling it.
- With this recipe you get about 2 cups (16 fl. oz.) of Baileys.

The homemade Baileys turned out so delicious, that after making the first batch with my mom, I also made another attempt at Baileys with my aunt, using a different, spiced recipe (adapted from here). Yum!

Ingredients
- 4 fresh egg yolks
- 1/2 cup cane sugar
- 3/4 cup powdered sugar
- 4 1/4 cups whipping cream
- 1/2 cup alcohol
- 2 tsp. vanilla
- 1 tbsp. unsweetened cocoa powder
- 3 tbsp. hot and strong brewed espresso
- 3 tbsp. tiger spice chai powder
Instructions
- Mix the sugar, cocoa and chai powder with the hot espresso.
- Add the egg yolks and mix until the sugar dissolves.3. Whip the cream into semi-solid consistency and mix with the egg-sugar-cocoa-espresso mixture.
- Add the alcohol.
- Fill in a bottle and keep cold until ready to serve.
Notes
- the Baileys keeps for about 2 weeks (kept cold).
- we used 90 vol%/ 180 proof alcohol (I believe in the US it is sold as Everclear). If you don’t have access to such high proof alcohol, I think you are safe with Whiskey or Rum as a substitute.
- shake well before serving.
- boil out a glass bottle to sterilize and let cool before filling it.
- with this recipe you get about 6 cups (48 fl. oz.) of Baileys.

I just made your Bailey’s a couple of gifts. It’s great but I am worried because of the strong coffee taste. .…more than I am use to. I noticed other recipes have 2 tsps not tbsps of instant coffee. Just checking to see if it was an error. I was planning to add coffee ice cubes but I will just serve with regular ice.…..one less step!

I have made 3 batches of the first recipie! Its so good.
I use ceral cream at 10% and tastes just as well. Help cut a little calories I hope.… Or just lets me drink more!
