Sometimes I just feel like baking. Not only to indulge in some yummy treats (well, okay that’s a big part of it..), but also to experiment and try new things. It doesn’t work out every time (who wants to see the failed attempts tough?! ;) )..
..but it did with these yummies: {mixed berry frangipane tartlets}
{mixed berry frangipane tartlets}

recipe via sweet food
Ingredients
- 2 3/4 cups flour {350g}
- small pinch salt
- 1 1/3 sticks unsalted butter {150g}
- 3/4 cup powdered sugar {100g}
- 2 eggs beaten
- 2 1/4 sticks unsalted butter {250g}, softened
- 2 cups powdered sugar
- 2 1/2 cups almonds {250g}, ground
- 1/3 cup flour {40g}
- 5 eggs lightly beaten
- mixed berries
- 3 tbsp. apricot jam
Instructions
- To make the pastry, sift the flour onto a work surface or large bowl and make a well in the center.
- Put the butter into the well and work, using a pecking action with your fingertips and thumb, until it is very soft.
- Add the sugar to the butter and mix.
- Add the eggs to the butter and mix together.
- Gradually incorporate the flour, flicking it onto the mixture, then crop through until you have a rough dough.
- Bring together and knead a few times until smooth.
- Roll into a ball, cover in plastic wrap and refrigerate for at least 1 hour.
- To make the frangipane, beat the butter until soft.
- Add the powdered sugar, almonds and flour and beat well.
- Add the egg gradually, beating well.
- Put in a clean bowl, cover with plastic wrap and refrigerate for up to 24 hours.
- Preheat the oven to 350°F (180°C).
- Roll out the pastry to 2mm thick and use to line the tartlet pans.
- Put the frangipane in a piping bag and pipe into the tartlet pans.
- Put the pans on a baking tray and bake for 10–15 minutes, or until golden.
- Cool slightly on a wire rack, then arrange berries on top.
- Melt the jam with 1 teaspoon water, sieve out any lumps and brush over the berries.

I love frangipane! Yummy yummy. I really love almond-flavored anything, though! I hope we’re going to have some nice berries this year. I picked up a punnet of locally-grown blackberries a couple of days ago and they’re so sweet and fragrant.

That’s so mouth-watering. It’s making me want to go to the kitchen and create something sweet. How much time do you need to come up with that? I wonder if I could try that on weekends for lunch’s dessert.
