Last weekend my 89 year old grandma came to visit from Berlin and even though she can’t walk very well anymore and our apartment is on the 4th floor, she was determined to climb the stairs to see our apartment.
Since my mom and brother came over to visit with us and my grandma as well, I prepared a little treat for all of us.
I love how moist the muffins turned out! Plus, they have the perfect sweetness! It was definitely not the last time I’ve made these yummies! ;)
{raspberry streusel muffins}

Ingredients
- 2 1/2 cups flour {300g}
- 3 1/2 tbsp. sugar {50g}
- 2 tsp. baking powder
- 1 pinch salt
- 1/4 tsp. cinnamon
- 1 egg
- 5/8 cup milk {150ml}
- 1/4 cup maple syrup {100ml}
- 3 1/2 tbsp. butter {50g}, melted
- 1 cup raspberries {150g}, frozen or fresh
- 1 1/2 tbsp. butter {20g}, melted
- 2 tbsp. rolled oats
- 1 1/2 tbsp. sugar {20g}
- 1/4 tsp. cinnamon
Instructions
- Mix the dry ingredients (except the last three ingredients).
- In a separate bowl mix the egg, milk, maple syrup and melted butter.
- Add the flour-mixture to the egg-milk-mixture and stir until moistened.
- Gently fold in the raspberries.
- Fill 12 greased or paper-lined muffin tins about two-thirds full.
- Mix the oatmeal, sugar and melted butter and sprinkle over the muffins.
- Bake at 350°F (175°C) for 20–25 minutes or until muffins test done.

I’d say you made your grandma’s trip up those stairs more than worth it!! I’m not the greatest baker, I have high altitude issues and it challenges me ;) But I still want to try your recipes cause they look sooooo good! I really love your photography and wish I could get photos half as good! I have the worst lighting and just can’t figure out how to make it work. If you ever want to post a little photography tutorial or two… I wouldn’t complain… *hint hint* :)

Ob my gosh, my favorite fruit is raspberry! I just love it. I love muffins and adding streusels on top is to die for. Hope you enjoyed your time with our Grandma! Gosh must of been exciting to have 3 generations all together! I’d give anything to be able to do that again, both are gone. So do enjoy, I know I keep saying it, only because I miss them so! Ohh, we really had a great time! We were planning for only a couple hours, having coffee and muffins, but we all ended up hanging out until late in the evening and made dinner together. :)
