Last week was my favorite aunt’s Birthday and we celebrated her 54th year on earth with coffee & cake in her garden.
My mom and I made this oh-so-delicious, but oh-so-full-of-calories (but-who-cares-it’s-declious) “cake”. It’s not really a cake, as you don’t have to bake it. So, we just named it berry bomb. ;)
{mixed berry mascarpone bomb}

- Yield: 1 cake (8 Servings)
- Prep: 15 mins
full of delicious calories! ;) Recipe via “we love living” magazine 5/12
Ingredients
- 1 package ladyfingers
- about 1 cup dessert wine (vino santo)
- 1 cup mascarpone {250g}
- 1 1/3 cups greek yogurt {300g}
- 4 tbsp. powdered sugar
- 1 vanilla bean
- blueberries
- raspberries
- strawberries
- red currants
- blackberries
Instructions
- Mix mascarpone, yogurt, powdered sugar and vanilla bean seeds in a bowl.
- Dip each ladyfinger in dessert wine for just 3–5 seconds (letting them soak too long will cause them to fall apart).
- In a separate bowl, line the sides and bottom with the soaked ladyfingers.
- Now add the mascarpone mixture and washed berries in layers and top off with the remaining ladyfingers.
- Cover the berry bomb with plastic wrap and refrigerate for 3–4 hours. Better even overnight.
- Before serving, turn over & decorate with the remaining berries. Then dust with powdered sugar.

Oh my God you are torturing me! Another berry dessert — now you know how much I love berries1 Is that your Mom wearing the blue dress holding the bomb. Bomb doesn’t seem to fit his dessert, since it is so pretty. This looks like a professional made it. I know you’ve been fooling us and you really have a bakery staff in the back room, right?
