I’m in love with fresh fall fruits! Especially when you can pick them yourself, like these beautiful juicy plums in my aunts garden. We picked two buckets full last week and went to “work” the day after. The result: Super-delicious streusel plum cakes. Yum!

Ingredients
- 1 package fresh yeast about {20g}
- 1 cup milk {250ml}, luke warm
- 4 cups flour {500g}
- 1/3 cup sugar {75g}
- 1 pinch salt
- 3 tbsp. vegetable oil
- 3/4 cup flour {100g}
- 1/3 cup sugar {75g}
- some vanilla
- 1/3 cup margarine {75g}
- 2 1/4 pounds plums {1kg}
Instructions
- Mix the yeast with 1 teaspoon of sugar and 5 tablespoons of lukewarm milk.
- Sieve 2/3rds of the flour into a large bowl, make a well in the center and fill with the yeast-mixture.
- Pour the sugar, salt and oil in a circle around the yeast.
- Start mixing from the center and add milk little by little.
- Pour the rest of the flour in the dough. The dough needs to be soft but not sticky.
- Cover with a clean and moist kitchen towel. Let sit in a warm place (we used the oven at 125°F/50°C) for about 20–40 minutes or until the dough has doubled in size.
- While the dough is rising, wash the plums, cut a slit on one side and remove pit.
- Knead the dough and roll out on floured surface and place on a greased baking sheet or two tart pans.
- Top with plum, starting along the edge, moving inwards and plums slightly overlapping. Let sit for about 10 minutes.
- In the meantime, make the streusel by mixing the flour, sugar, vanilla and margarine by hand until you have a crumbly texture. You might have to add some more flour to get the right texture.
- Sprinkle the streusel over the cake.
- Bake at 350°F/180°C (in preheated oven) for about 40 minutes or until golden brown.

Wow, this is just what I need! We have 8 plum trees in our garden and there is only SO much jamming I can do. ;)
I particularly ove that simply by using non-dairly margarine this will be vegan.
