Sometimes I'm not sure if I really like Sundays.. Even though I do love sleeping in and/or being lazy on a rainy Sunday afternoon, it also means that it's back to the grind the next day.. ;)

All the stores here in Germany are closed on Sundays, so if we get short-notice visitors on a Sunday (like we did a couple weekends back) and I want to bake a little something, I have to resort to what I have at home.

I make sure I keep the ingredients for this delicious cake at home at all times. It's easy to make and SO yummy!

{apple cake with streusel}

Ingredients

  • 1/2 cups butter
  • 1/2 cups brown sugar
  • some vanilla
  • 3 eggs
  • 1 1/4 cups flour
  • 1/3 cups cornstarch
  • 1 tsp. baking powder
  • 5-6 apples
  • 1 1/4 cups flour
  • 3/5 cups brown sugar
  • some vanilla
  • some cinnamon
  • 4 1/2 oz butter

Instructions

  1. Mix the butter with the brown sugar and vanilla until creamy.
  2. Sift the flour, baking powder and cornstarch and mix with the butter mixture.
  3. Knead in the eggs.
  4. Line the bottom of a springform pan and butter the sides. Fill the batter into the springform.
  5. Peel the apples, cut in slices and arrange evenly on the cake.
  6. Mix the flour, butter, sugar, cinnamon and vanilla and sprinkle on top of the cake.
  7. Bake in the preheated oven for 40-45 minutes, until golden brown at 350°F (180°C).
  8. Remove from the oven and let cool on a wire rack.

    This looks delicious, I know what you mean about having to just work with what you’ve got when a visitor arrives at short notice!! I made an apple streusel cake last year and it was delicious, so I’m sure this would go down well with any guests! :)
