{apples & cream trifle}

A couple weeks ago, my mom invited the hubby and I over for dinner. Not only was the actual dinner delicious, but the dessert was yuuummy!!
Last wednesday we recreated the dessert to share it on my blog with you. Since we didn’t follow an exact recipe, I can only give estimated amounts of ingredients.

 

{apples & cream trifle}

What you’ll need:
for the applesauce

  • 4 apples (firm and tart)
  • Cinnamon
  • (Brown) sugar (to taste)
  • 1 vanilla bean (I’m sure extract will work just as well)
  • Some water
for the roasted almonds
  • About 12 cup almonds flakes
  • (Brown) sugar
  • Butter
for the cream
  • Whipping cream
  • 1 vanilla bean
for the cookie paste
  • Dutch windmill cookies (you can substitute with other cookies, like amaretti or cantuccini)
  • A little hot water
  • Optional: Amaretto, rum or Licor 43 (or any sweet liqueur ;) )

How to:

for the applesauce
  1. Peel, core and dice the apples.
  2. In a sauce pan combine apples, cinnamon, sugar and scraped vanilla from one vanilla bean.
  3. Add some water.
  4. Cover and cook until the apples are soft. Stir occasionally.
  5. Mash with a fork or potato masher. (We left some bigger chunks of apples)
  6. Let cool.
for the roasted almonds
  1. In a frying pan over a low heat, melt some butter.
  2. Add the almond flakes and sugar.
  3. Toss frequently until golden brown.
  4. Watch the nuts closely, as they can turn from done to burnt quickly.
for the cream
  1. Whip the cream on medium speed.
  2. Just before it’s done, add the scraped vanilla of one vanilla bean.
for the cookie paste
  1. In a bowl, cover the cookies with some hot water.
  2. Mush with a fork.
  3. Optional: Add some liqueur.

In little jars or glasses, start layering the apple sauce, whipped cream, almonds and cookie paste. Top off with some whipped cream and decorate with a spoon full of jelly and roasted almonds.
