{banana & cream pancake tower}

When I was little, my absolute favorite book was Pettson & Findus: Pancakes for Findus! I knew it by heart and would often “read” it to my mom.


She still has it in her bookshelf (keeping it for her grand children *cough*) and last week it inspired us make our own “Findus” pancake tower. Yum!

  • Yield: about 10 pancakes

delicious stacked pancakes!


  • 3 egg yolks
  • 3 egg whites
  • 13 cups flour
  • 1 cup milk
  • 1 pinch salt
  • 1 tsp. baking powder
  • 14 cup sugar
  • 2 bananas
  • some honey
  • 1 cup whipping cream
  • sliced almonds
  • sugar


  1. Combine sugar with the egg yolks and beat.
  2. Add milk, flour and baking powder and mix until all lumps are gone.
  3. Beat the egg whites with a pinch of salt in a separate bowls until stiff.
  4. Fold the egg whites into the batter.
  5. Bake the pancakes and set aside.
  6. Cut the bananas lengthwise and fry in a pan until golden brown.
  7. Drizzle some honey on top.
  8. Beat the whipping cream at high speed until stiff. You can also sweeten the whipped cream a little by adding sugar. For us, the bananas and honey were adding the right amount of sweetness though.
  9. To assemble the pancake tower, layer the pancakes with the bananas and cream and sprinkle with sugar-roasted sliced almonds.
  10. To make the sugar-roasted almonds, just combine a little sugar and almonds in a pan and fry until golden brown, stirring constantly.

    Hello! First time here on your blog and I just love this post! We used to make banana pancakes all the time when we lived in Hawaii. Though, they were not stacked in a tower and certainly not as fancy as yours look! This makes me think of the Jack Johnson song “Banana Pancakes”!
