{black forest bundt cake}

Last Sunday when I met up with my mom to go to the flea market, we also decided we wanted to bake.
Unfortunately, if we don’t plan ahead, we are limited to using what we have on hand — all stores are closed on Sundays in Germany.

So, after raiding the cupboards and fridge, we came up with a different take on the black forest cake: A black forest bundt cake.

I’m partying here! ♥

a different take on a delicious black forest cake

  • 5 eggs
  • 34 cup sugar
  • 12 cup unsweetened cocoa powder
  • 12 cup flour
  • 13 cup cornstarch
  • 1 tsp. baking powder
  • about 1.5 pounds sour cherries
  • some cornstarch
  • some lemon zest
  • some vanilla
  • 12 cups heavy whipping cream
  • 14 cup sugar
  • chocolate sprinkles
  • powdered sugar

  1. Preheat oven to 350°F (175°C). Grease and flour (we used cocoa powder) a bundt cake pan.
  2. Separate the eggs. Beat the egg whites with a pinch of salt until stiff.
  3. Slowly add the sugar to the beaten egg whites.
  4. Now add the egg yolks, then add the flour (mixed with baking powder), cocoa and cornstarch little by little.
  5. Bake for 35–40 minutes, or until wooden toothpick inserted in the cake comes out clean. Let cool in pan for about 10–15 minutes. Loosen edges, and remove to cooling rack to cool completely.
  6. Combine cherries, cornstarch, lemon zest and sugar in a saucepan. Cook over low heat until thickened. Stirring constantly.
  7. Stir in about 1 teaspoon vanilla. Cool before using.
  8. Combine whipping cream and sugar in a bowl. Beat at high speed until stiff.
  9. Mix the whipped cream with chocolate sprinkles.
  10. With a long serrated knife, cut the cake in three layers.
  11. Spread the bottom layer with 12 of the cream and 12 of the cherry mixture. Top with second layer and repeat.
  12. Cover with powdered sugar.
  13. Enjoy! ;)

We were excited to try this recipe- the photos are stunning! So, we tried it twice actually at my house, with a different baker each time, and the cake part turned out strange both times. The 1st time it came out of the oven only 1.5 inches tall, very strange for a bundt cake. The 2nd time it was maybe 3 inches tall, which is still oddly short. And both times the cake was grainy, unsweet, and dry (dry even though they were both pulled out of the oven much, much earlier than called for.) I’m not ruling out that we messed things up on our end, but is it possible that there’s a typo in the list of ingredients? I’m especially curious about the 13 c of cornstarch. Thank you!

I am so sorry the cake didn’t turn out right for you.
I have to admit that I did bake the cake in Germany, so I hope the ingredients don’t differ too much. Maybe there is a difference in the flour or baking powder?
Again, I apologize for those failed attempts. I know that must have been frustrating..
All the best and greetings from Germany,

I tried the recipe as well and it didnt quite turn out as well. It was dry and unsweet. Moreover, I had many questions whilst baking- you mention sugar twice in the ingredients list but the recipe requires inclusion of sugar at three places (could that be an error), do you fold in or whisk in the flour intO the egg mix? Many such questions. It didnt work for me, so disappointing as this cake looked gorg in the pic.
