We share everything from roadside furniture re-dos to home makeovers to recipes! Today we're sharing something we love ALMOST as much as a good room re-do...rolo cookies!

I needed to make cookies stat for my boy's school party. (Thanks for the day before notice, son!) I was browsing my "Best of the Best of Utah" cookbook from my mother-in-law and found an easy recipe called "Crazy Chocolate Caramel Cookies". A Rolo Cookies Recipe?! They're simply a chocolate cake mix with Rolo's inside!

They're brilliant! It's the perfect, quick cookie to satisfy an emergency sweet tooth attack for chocolate lovers ;)

Ingredients:

  • 1 box of chocolate cake mix
  • 1/2 cup oil
  • 2 eggs
  • Rolo candies

Directions:

  • Heat oven to 350.
  • Combine cake mix, oil and eggs, blend well.
  • Place a Rolo candy in the center of a piece of cookie dough, roll the dough in a ball around the Rolo.

  • Place on ungreased cookie sheet 2" apart.
  • Bake 8-10 minutes.
  • Cool 1 minutes and remove from cookie sheet.
  • [Makes 4 dozen cookies]

Love this recipe, I'll be stocking up on Rolo's and saving them in the freezer for potlucks, get togethers, etc. They look like an ordinary cookie but have a surprise inside! Sneaky, sneaky!

    LOL…I am laughing, because I have found myself in the same situation with my own children. A day’s notice! Yet, we always manage to make something amazing. My girls are really into baking cookies right now. I know they will love this recipe. I won’t forget to visit your blog, which I am sure is very cute.

    I made these one year for a cookie exchange but did NOT read the directions entirely. I bought those hard caramels and made them and they were delicious. HOWEVER, when they cooled off the middle was hard as a rock! I had no time to remake so I had to include a waiver that no one would sue me if they had to make a trip to the dentist for a broken tooth. We warmed them up with about 10 seconds on the microwave and saved our choppers!

    Yummy yummy I was just sitting here with my husband and ask him if he liked rolos. He said yes so I’m going to try these. Thanks for sharing, God bless.

    Oh it looks so tasty – but my trip to the dentist just over a week ago tells me not to even tempt myself! :(
