A while back I found an awesome recipe at Blonde Designs and had wanted to try it. When my husband told me he wanted to bake cookies for his class (he is attending German language classes), I finally had my excuse! Yay!

So, we bought the few things we needed and got to “work”. We decided on making Cream Cheese Sugar Cookies and Heidesand (I think it’s similar to shortbread) Sea Salt Cookies.
Both of them turned out to be super yummy!

Cream Cheese Sugar Cookies:

1 cup butter, softened
3 oz. cream cheese, softened
12 cup sugar
1 egg
pinch of salt
2 teaspoons vanilla extract
14 teaspoon almond extract (optional)
3 cups flour


Cream butter and cream cheese until fluffy; add sugar and mix.
Add egg, salt, vanilla, and almond extract; mix well.
Add flour. Wrap dough in plastic and chill several hours or overnight.
Roll out on floured surface and cut out cookies (keep on the thicker side). Bake on ungreased sheet at 375°F, until edges begin to barely brown.

Heidesand Sea Salt Cookies:

Okay, this is translated (by me ;) ) from a German recipe. I hope it all makes sense and that you excuse any weird sounding expressions..

INGREDIENTS (about 80 cookies)

13 cups (300g) butter
12 cups (400g) flour
34 cup (175g) sugar
1 teaspoon vanilla extract
1 teaspoon sea salt
2 tablespoons sugar (to roll the dough in)
12 teaspoon orange zest


Let the butter melt at medium temperature and brown a little. That gives the cookies a fine, caramel aroma. Let the butter cool down and harden again.
Cream the butter until fluffy. Add flour, sugar, vanilla, orange zest and salt. Finish up mixing by hand.
Form the dough into rectangular pieces (1 x 1 x 10in) and roll in sugar. Wrap them up in saran wrap and place in the fridge for 30 minutes.
Preheat the oven to 350°F (180°C).
With a sharp knife, cut the dough into about 13 in (8mm) thick slices. Place the slices on baking sheets lined with baking paper. Don’t put them too close to each other.
Bake the cookies for about 12–15 minutes, until slightly brown, and let cool on a cooling rack.
