It's national ice cream month and what better way to celebrate it than by making some delicious and easy to make ice cream sandwiches.

These little sandwiches are so simple, yet make for such a fun dessert or summer snack. I love recipes that are so effortlessly made!

These ice cream sandwiches also freeze well. Just wrap them in parchment and place in the freezer. Take out and unwrap when you're ready. Yum!
