Summer is finally here and it’s time for some summerly drinks!
I love ginger ale, but it’s not really cheap in Germany (I don’t know why it’s more expensive than other soft drinks over here..). So, we treat ourselves only every now and then to some gingerly goodness.
A few weeks ago I thought, why not make my own ginger ale?! It’s so much healthier and you know exactly what’s in it! So, today was the day! I finally have TIME again! Yay!
Just for the ones wondering how things went with my bachelor thesis defense (or verbal exam) yesterday:
I passed! I am now a proud “owner” of a bachelor of science. :)
But more on the ginger ale..
It turned out pretty yummy! Though, next time I would use a little less sugar (and possibly the brown version), more ginger and may let it simmer a little longer for it to get a more syrupy consistency.
INGREDIENTS
1 cup thinly sliced fresh ginger
2 cups water
2 cups sugar
limes (optional)
PREPARATION
Bring the sugar and water to a boil and let simmer until the sugar dissolves. Stir occasionally. Add the cut ginger and let simmer for about 15 minutes.
Let cool slightly before straining the syrup into a bottle or jar with a lid.
Add the syrup to a glass of club soda, squeeze in a lime wedge and voilà — yummy ginger ale! ;)

@ F: I am not exactly sure how long the syrup will keep fresh, since this was the first time trying the recipe. But since it only has sugar, water and ginger in it and ginger keeps fresh for a long time, I would say at least 2–3 weeks. I am sure you will be able to tell once it goes bad by looking at it or smelling it. :)
@ Paula Jo: Thank you so much for believing in me! :) I went out with my family for dinner to celebrate on Monday. Unfortunately over here there is no graduation ceremony or anything. So that’s all I get. Hehe

How long will it keep? Until it grows mold on it, which will probably be at least six months, if you pour it boiling hot into sterilized jars, and cap immediately, then refrigerate.

Thursday December 8th, 2011 at 12:57 AMI know you said you wanted to decrease the amount of sugar and I agree but then it doesn’t turn out as syrupy. I’d try honey.
Also, to Dawn, diabetics should not use sweeteners with aspartame in it. I’m not positive if Splenda is part of this group but aspartame can have detrimental effects for not only regular eaters, but diabetics as well. Stevia, or rapadura sugar is best for diabetics.
