Around Easter, my mom and I experimented a little with cake batter made from scratch. We didn’t follow any recipe, instead used what we had on hand and ended up with a yummy coconut-almond poundcake.
We had so much cake that we decided to freeze half of the cake to use for making rum truffles and last week was the day of days. ;)

They turned out extreeemely yummy!


What you’ll need:

  • leftover cake, crumbled
  • cocoa powder
  • rum (if you want to make it child-safe, try using rum flavor)
  • chocolate sprinkles

How to:

  1. Combine the cake crumbles with cocoa powder and rum.
  2. Roll the mixture into little balls.
  3. Roll into chocolate sprinkles and let dry. If the sprinkles don’t stick, try rolling the balls in a little water or sugar-water first.
  4. Yum! ;)

    Coconut almond cake…that sounds divine! Do you happen to have the recipe as i would loveee to try that out if you would recommend it :) As for the truffles, they look absolutely gorgeous and such a perfect gift, i will definitely be making these at some point!
