Meine Mom und ich haben uns zum Muttertag getroffen um zu basteln. Naja, wir haben nicht wirklich gebasteln.. Dafür haben wir aber eine Leckerei gebacken. Diese leckere Biskuitrolle mit Zitronenfüllung. Yum!

Ich weiß, dass Muttertag bereits vor knapp 2 Monaten war, aber irgendwie komme ich erst jetzt dazu dieses Rezept zu posten. Aber es passt eigentlich auch viel besser zu diesen Sommerwetter. ;)

Ich muss zugeben, dass mich das Rezept erst etwas eingeschüchtert hat.. Aber es sieht wirklich komplizierter aus als es ist und ich finde für den ersten Versuch ist die Biskuitrolle auch wirklich toll geworden.
Also, wenn wir es können, könnt ihr es auch! ;)

  • 4 eggs
  • 4 tbsp. water
  • 34 cups sugar
  • 1 pinch salt
  • 23 cups flour
  • 14 cups cornstarch
  • 1 tsp. baking powder
  • 1 lemon
  • 1 cup greek yogurt
  • 23 cups yogurt
  • 6 sheets gelatin
  • powdered sugar


  1. Preheat oven to 395°F (200°C).
  2. Separate eggs. Mix the egg yolks with 4 tbsp. of luke warm water and 23 cups (80g) of the sugar for 2–3 minutes until creamy.
  3. Beat egg whites with a pinch of salt until stiff.
  4. Mix flour, cornstarch and baking powder and sift in the egg yolk mix. After combined, fold in beaten egg whites.
  5. Pour the batter onto a baking paper lined baking sheet and bake for 10–12 minutes or until edges start to turn golden brown.
  6. While cake is baking sprinkle 1 tbsp. of sugar onto a clean kitchen towel. Turn out warm cake onto the prepared kitchen towel and start rolling up the cake from the long side. Cool on wire rack.
  7. Mix the greek yogurt, yogurt and 2 tbsp. of lemon juice, 1 tbsp. of lemon zest and the remaining sugar.
  8. Prepare the gelatin, following the instructions on the package. Mix the gelatin with the lemon creme. Place in fridge for 10 minutes.
  9. Unroll the cake and spread the filling over the top. Reroll cake and wrap in plastic wrap. Refrigerate for about 2 hours.
  10. Sprinkle with powdered sugar before serving.

      Please let me know how it turns out for you. Ooh, and the original recipe calls for quark (I think kwark in Dutch) instead of greek yogurt. Just in case you’ll give it a try. ;)

    Oh that looks so pretty and so good! Lemon is a favourite flavour around here so I might give it a try, but must admit it does look a little beyond my baking ability. Still very nice to admire. You and your mom are a good creative team.
