{mixed berry clafoutis}

After showing my mom the {nifty thrifty sunday} featured clafoutis from Angie of Echoes of Laughter, and finding some fresh mixed berries at a fruit stand on the flea market on Sunday, it was decided! So, we tried our hand on this delicious treat.

It's so simple to make and not much can go wrong. Perfect for someone like me, who sometimes is all thumbs when it comes to cooking or baking. :)

{mixed berry clafoutis}

Ingredients

  • 3/4 cup milk
  • 1/2 cup sparkling water
  • 4 egg yolks
  • 4 egg whites
  • 1 pinch salt
  • 1/2 cup almonds
  • 1 1/4 cups flour
  • 1/4 cup sugar
  • 1/2 vanilla bean
  • 1 handful raspberries
  • 1 handful blueberries
  • 1 handful strawberries
  • some lemon zest
  • some powdered sugar
  • some butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Beat the egg whites until stiff.
  3. In a separate bowl mix milk, water, egg yolks, some lemon zest and vanilla bean seeds.
  4. Add salt, sugar, ground almonds and flour little by little and mix well.
  5. Fold in the egg whites.
  6. Butter a pie pan or heavy frying pan (with heat resistant handle).
  7. Arrange berries to cover the bottom of the pan.
  8. Pour the batter over the berries.
  9. Bake for about 35 minutes or until golden brown.
  10. Use a few more berries to decorate the clafoutis.
  11. Dust with powdered sugar before serving.

    Looks delicious! I’ve made clafouti with cherries before, but Paul isn’t a big fan of cherries, so I’ll have to try this mixed-berry version. Yum.

    I love claufouti! I use a simplier recipe that doesnt require the egg white beating but Ill have to try yours to see if its better. (http://www.brooklynlimestone.com/2008/06/dont-adjust-your-dials.html)

      I’m now officially in love with clafoutis, too! ;) I had never tried it before, but the recipes looked so delicious, I had to give it a go!
      I adjusted the recipe a little by adding beaten egg whites, just from experience with regular (german) pancake batter. I think with the addition of sparkling water and beaten egg whites the pancakes/clafoutis get much more fluffy. Yum!

    Oh my, there you go again, giving me a recipe I just have to try.. I am a fruit lover of the berry kind, and this sounds so good AND easy. But I am so craving one of these, so what’s a person to do? Send their hubs to the store for the ingredients you don’t have. I won’t tell him it’s you this time.
