What did you do for Mother’s Day?
This is what we did, or better: ate. A delicious White Chocolate Cheesecake with Oreo Crust and fresh Berry Topping. Long title to something that could be summed up in one word – yum!

About a week ago I found a delicious looking recipe on allrecipes.com – just in time for Mother’s Day. I took a few adjustments, like using Oreo cookies instead of regular chocolate cookies and also omitted the extra sugar (except for the raspberry sauce).

I have to admit that I was a little intimated at first, as I have never baked a cheesecake that I really liked.. It turned out great though! Perfect consistency, the right mixture between sweetness and tartness and looking mouthwatering (if I may say so myself ;) ).

{white chocolate cheesecake}

  • 2 cups Oreos about 16-20 cookies
  • 1/4 cup unsalted butter {60g}, melted
  • 10 ounce frozen raspberries {300g}
  • 2 tsp. cornstarch
  • 2 tbsp. brown sugar
  • 1/2 cup water {120ml}
  • 2 cups white chocolate {350g}
  • 1/2 cup half-and-half-cream {120ml}
  • 24 ounces cream cheese {680g}, room temperature
  • 3 eggs room temperature
  • 1 tsp. vanilla extract
  • fresh blueberries
  • fresh raspberries
  • fresh strawberries


  1. Line the bottom of a spring-form pan with parchment paper. Spray the insides of the pan with cooking spray.
  2. Crush Oreos (with filling) in a blender or food processor. Mix crumbs and melted butter. Press onto the bottom of a springform pan.
  3. In a saucepan over medium-low heat, combine raspberries, 2 tbsp sugar, cornstarch, and water. Bring to a boil and let simmer for 5 minutes, or until sauce thickens. Strain sauce with a mesh strainer to remove seeds.
  4. Position oven rack in the middle of the oven and preheat to 325º F (165 °C).
  5. Break the chocolate into a metal or glass bowl. Melt the chocolate with half-and half over a pan of simmering water. Stir occasionally until consistency is smooth.
  6. Whisk the cream cheese, preferably with electric beaters, until smooth. Beat in eggs, one at a time. Then stir in the white chocolate and vanilla.
  7. Pour mixture onto the Oreo crust.
  8. Fill a cupcake tin with hot water and place on rack in the preheated oven. This will help prevent cracking on the surface of the cake. (Not that this really matters, as you will be covering the cheesecake with berries anyways.. ;) ) Set the cheesecake on top and bake for 55-60 minutes, or until filling is set.
  9. Turn off oven, open door slightly and let cake cool down completely. Cover the cake in plastic wrap and refrigerate overnight.
  10. Remove cake from pan, pour raspberry sauce on top and decorate with fresh berries. Enjoy! ;)
